Lecture summary:
Food contact surfaces can be fully cleaned if they are designed to prevent the build-up of microorganisms and contaminants that could contaminate the product. Cleanability is achieved through a number of key criteria that are well known in the food industry and can be transferred to transport containers. I look forward to presenting the principles of hygienic design applied to food facilities, as well as lessons learned from food manufacturing that can be useful for food transport.
